Trader Joe’s Red Curry w/ Tofu

First attempt at making curry was pretty successful. Granted, I did cheat a bit w/ the pre-made sauce. But here’s the recipe if you want to try (& for my memory):

1 medium onion, chopped
2 cloves garlic
1 tbsp ginger (I just used ground)
11 oz. Trader Joe’s Red Curry sauce
Extra firm tofu, cut into about 64 pieces
1 cup basmati rice
1 cup frozen corn
1 cup frozen peas
1 can chickpeas
Grapeseed oil

Cook rice according to directions on package. Heat 2 tbsp grapeseed oil in a pan over medium-high heat. Add tofu (it should sizzle) to pan and then cover with black pepper. Brown on both sides for about 10 minutes. In another pan, heat a tablespoon of grapeseed oil over meduim high heat. Add the onion, ginger and garlic and cook for about a minute. Then add curry sauce and let sit for another minute. Next add the corn, peas, tofu and chickpeas. Turn heat down to medium low and let sit for about 10 minutes. Stir and add to rice. Enjoy!!! :)
